Banana Bread

Ingredients:

1 1/4 C Sugar
1/2 C Shortening
2 Eggs
1 C Ripe Bananas
1 C Chopped Nuts
1 tsp Vanilla
1 7/8 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
pinch of salt
3/4 C Buttermilk or Sour Milk

Directions:

Combine dry ingredients in a mixing bowl and set aside.  Cream together sugar and shortening, add eggs, bananas, buttermilk and vanilla.  Slowly add dry ingredients and mix well.  Fold in chopped nuts.  Can be baked in prepared loaf pans or 9 x 13 cake pan.  Bake @ 350° for 30-45 mins or until knife in center comes out clean.  Poke holes in bread when warm and top with icing.

Icing:

1/4 C Ripe Bananas
3 T Evaporated Milk
3 T Sweetened Condensed Milk
5 T Softened Butter
1 T Vanilla
3 C Powdered Sugar

Mix bananas, milk, butter, and vanilla.  Slowly add powdered sugar and continue to mix.  Pour over warm bread and serve.
