Ingredients:

2 C Flour
3/4 C Cocoa
1 tsp Baking Soda
1/2 tsp Salt
1 C Butter
2/3 C Granulated Sugar
2/3 C Brown Sugar
1 tsp Vanilla
2 Eggs
5 to 6 Oz Candy Pieces (Choc. Chips, Andes Mint Morsels, White Choc. Chips, Choc. Vanilla Swirl Chips, etc.)

Directions:

Preheat oven to 350°

Combine Flour, Cocoa, Baking Soda, & Salt. Set aside.  Beat Butter, Sugars, and Vanilla in a large mixing bowl until creamy.  Add Eggs & Beat well.  Gradually beat in Flour mixture.  Stir in Candy Morsels.

Bake @ 350° for about 9 minutes.

Ingredients:

1 1/4 C Sugar
1/2 C Shortening
2 Eggs
1 C Ripe Bananas
1 C Chopped Nuts
1 tsp Vanilla
1 7/8 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
pinch of salt
3/4 C Buttermilk or Sour Milk

Directions:

Combine dry ingredients in a mixing bowl and set aside.  Cream together sugar and shortening, add eggs, bananas, buttermilk and vanilla.  Slowly add dry ingredients and mix well.  Fold in chopped nuts.  Can be baked in prepared loaf pans or 9 x 13 cake pan.  Bake @ 350° for 30-45 mins or until knife in center comes out clean.  Poke holes in bread when warm and top with icing.

Icing:

1/4 C Ripe Bananas
3 T Evaporated Milk
3 T Sweetened Condensed Milk
5 T Softened Butter
1 T Vanilla
3 C Powdered Sugar

Mix bananas, milk, butter, and vanilla.  Slowly add powdered sugar and continue to mix.  Pour over warm bread and serve.

There is much debate in our house about whether or not to add peanut butter. My husband argues that they won't set without the peanut butter but I grew up making them without.  To be sure they set you need to make sure that they come to a full rolling boil before you start timing them. These are so quick and easy and a favorite in our house with or without the peanut butter. Which do you prefer?




No Bake Chocolate Oatmeal Cookies

Ingredients:

2 C Sugar
1 Stick Butter
1/2 C Evaporated Milk
4 T Cocoa
3 C Old Fashioned Oats
1 T Vanilla

Optional:
1/2 C Peanut Butter
1 C Coconut

Directions:

Mix sugar, butter, milk, cocoa in large sauce pan.  Stirring constantly bring to a boil and boil for 1 min (no more/no less).  Remove from heat and stir in oats (peanut butter & coconut if using)  Spoon on to wax paper and let set up.
